Remember summer? No, neither do we. But never fear! Our stunning Rum Bongo cocktail has the near-magical power to transport you instantly to an exotic island filled with palm trees and sandy beaches. Thanks to a heady combination of rum, coconut schnapps, pineapple and passion fruit, this is a drink that really is paradise in a glass.

The ingredients

37.5ml Bacardi Superior rum

25ml Teichenné Coconut schnapps

12.5ml grenadine

12.5ml passion fruit purée

Pineapple juice to top

The method

Fill a decent highball glass with ice cubes and add the passion fruit purée (look out for it in your nearest fancy supermarket). Pour in the coconut schnapps, rum and grenadine, then stir vigorously for 30 seconds. Top up with pineapple juice and give another little stir before dropping in a couple of straws and serving.

Then all you need to do is find a sun-drenched beachfront terrace on which to enjoy it. Or your sofa will do. Either is good.
